黑椒雞球
Chicken with Black Pepper Sauce

              

材 料 
獻 汁
醃 料(雞)
雞髀肉 200 克       5 湯匙 薑汁 1 茶匙
青椒 1 個 生抽及老抽 1 茶匙 生油 2 茶匙
紅辣椒 1 隻 ¼ 茶匙 ¼ 茶匙
洋蔥 ½ 個 芝麻油及胡椒粉 少許 芝麻油及胡椒粉 少許
蒜頭 1 粒 生粉 1 茶匙 生粉 1 茶匙
黑椒粒 1 湯匙     水及油 各 1 茶匙

 

做法

  1. 青、紅椒及洋蔥切角,蒜頭切片。
  2. 雞髀肉切粗粒,拌入醃料待 10 分鐘。
  3. 燒熱 2 湯匙油於鑊中,爆炒椒及洋蔥至軟身。取起。
  4. 餘下的油炒雞肉,加入黑椒炒香。
  5. 拌入椒,洋蔥及獻汁,快手炒勻,即可上碟。

Marinade (Chicken)
Chicken Fillet 200g       Water 5 teaspoons Ginger Juice 1 teaspoon
Green Pepper 1 pc Light Soya and Dark Soy Sauce 1 teaspoon Little Soy Sauce 2 teaspoons
Red Chili 1 pc Sugar ¼ teaspoon Sugar ¼ teaspoon
Onion ½ pc Sesame Oil and Pepper a little Sesame Oil and Pepper a little
Garlic 1 clove Bean Starch 1 teaspoon Bean Starch 1 teaspoon
Black Peper, crushed 1 teaspoon     Water and Oil 1 teaspoon each

 

Method

  1. Cut green, red and onion into dices, section spring onion, slice garlic.
  2. Cut chicken into cube, mix with marinade for about 10 minutes.
  3. Heat 2 tablespoons of oil, saute peppers & onion until soft. Remove.
  4. Fry the chicken cubes with remaining oil, add black pepper & fry until fragrance.
  5. Stir in pepper, onion & sauce ingredients, mix well. Ready to serve.
